Pumpkin French Toast

While planning my menu for New Year’s Day breakfast I happened upon a new to me blog, Brave Girls Club. The blog is very inspirational and I highly recommend you check it out. Pumpkin Pecan Baked French Toast

1 loaf French Bread (or two baguettes)
8 large eggs
2 cups half and half
1 cup milk
2 T sugar
1 tsp vanilla extract
1 tsp pumpkin pie spice (or 1/2 tsp cinnamon and 1/2 tsp nutmeg for plain version)
1/2 cup pumpkin puree (like Libby’s – leave out for plain version)
dash salt

For topping:
2 sticks butter
1 cup brown sugar
1 cup chopped pecans
2 T corn syrup
1 tsp pumpkin pie spice (or 1/2 tsp cinnamon and 1/2 tsp nutmeg for plain version)

Slice bread into 1 inch slices. Arrange in a generously buttered 9×13 flat baking dish, overlapping the slices. In a bowl, whisk the eggs, half and half, milk, sugar, vanilla, pumpkin pie spice, salt, and pumpkin puree. Pour over the bread, reserving about 1/4 if you don’t like your french toast too soft and custardy. Cover and refrigerate overnight.

The next morning, take the french toast out of the refrigerator and preheat your oven to 350. Make the topping by putting the butter, brown sugar, chopped pecans, corn syrup, and pumpkin pie spice into a big bowl. Combine with a fork or with a pastry cutter until it’s well-mixed and crumbly. Spread evenly over the bread.

Bake for about 40 minutes or until golden brown. Serve plain or with maple syrup or Buttermilk Syrup.

I use Shutterfly for our Christmas Cards… I love their choices and their pricing is not so bad either.  

This year I decided to go with a 5 X 7 card format and one photo.  As soon as I saw the option for this background, I knew it was the perfect one and did not have to do any more searching.  In years past the entire Christmas Card format is something that can take me a long time to figure out.

Now I just need to find my address list that sort of got lost in all my desk organization.

Life, Liberty and the pursuit of Happiness

It should be required reading that every 4th of July we read to our children the Declaration of Independence and explain (as appropriate for their age) why we celebrate the Holiday. Men and women have served this country since it’s birth to keep this great land of our Free… and for all it’s many problems and issues it is still one of the greatest lands of this time and has been since it’s inception. Founded by those who wanted freedom and knew what it was like to be subjects of an unjust King.

We had a great weekend visiting family and celebrating our nation’s birth. I am sad that the weekend has came to an end, because it has been so good. I will post later some of the things we did along the way this past weekend. What did you do, did it include fireworks?

Mother’s Day Card from my son

I love these cards where the kiddo is asked about a parent from their perspective. I love that little man sees me as loving, funny and happy and smart. But I am so sure that a lover of working is not how I want my little guy to see me…I do work out of the home and maybe he thinks that I love to go to work…most days the opposite is true but for our family I need to work. Then again, I am wondering if he is thinking about the pestering I do to clean up the house? Anyway, hopefullly next year it will not be a lover of working…. I am going to work hard to make sure he knows what my priorities are, which is he and his sister.

I am glad to see though that he knows that when he comes home from school or an outing with his dad that it does make me happy that he is home.

Now the next one, I fear nothing. If only he knew all the fears and worries I have for him and his sister to be safe in this world, about what the future will hold for all of us, etc. then he would know on the inside I am a shaking bowl of jello. However, I do try to turn my fears over to God and lately I have became better at letting God carry the buden of my worries than dwelling on them and letting it effect our daily life.

Maybe I should answer the same questions about my little man.

FUNNY, Loves to Cuddle, Full of Energy, Strong-Willed
Who feels love by being cuddled and read to at night.
Who fears tornados….checks with me or his dad every night practically to see if a tornado will come during the night.

You will always be my baby boy but you are growing up so fast….
